Six Months in Mexico: The "Honeymoon Period is Over"

We've been here six months. The "Honeymoon Period" is over and... I love it here more than ever! This is largely due to that fact that I made a Spanish lessons program with Chat GPT, people actually understand me now! I'm nowhere near fluent or even proficient but I'm past the stage where people just look at me confused, when I talk. Our friends are incredibly cool and patient with me but I've gotten good enough, that they often forget I'm still learning until they see the confused look on my face.
While I'm improving with Spanish, Maria's English frequently goes to shit. It's the conversion period. Now she's constantly speaking and thinking in Spanish so sentences like these come out: "Tell me what is it?" "Hand me the the basket white."
Stuff like that leaks out here and there. I WISH I had that problem but hey, I'm making progress! We went to a traditional little restaurant that we love. And we did not have Mexican food. We had Hausteca food! Just as here in San Luis Potosi, they have "enchiladas Potosi", every state has their own special twist on tamales, tacos etc.
Our favorite tacos are "Estilo Baja" i.e. fresh fish tacos from Baja California Sur. Tasty! Even the salsas can be state or regional! Habanero salsa is hottest and from the East Coast (close to Havana Cuba), Chile de Arbors (Tree Chile Peppers!) comes from Jalisco. My favorite is Serrano. Muy picosa (spicy) but unlike the Habanero, the heat doesn't overpower the flavor. Serrano peppers are spicy but VERY flavorful! Definitely my favorite!

Spanglish incident? YES! Our waitress told her they had "e squeeze" pineapple, orange and apple juice. We went with pineapple. But it wasn't fresh squeezed liked all the restaurants have (and they had too!). It was Escuis brand soda! Thinking in two languages will do that!
